Simnel Cake family size

Traditional Easter or Mothering Sunday cake with a heritage said to stretch back to the Romans, full of fruit, peel and spices. Blanketed and sandwiched with homemade marzipan, with eleven little balls of marzipan which are meant to represent the 12 apostles minus Judas. A proper seasonal treat.
