Very tasty with a good crust. I know it’s a rye bread and they tend to be heavy. I felt this one perhaps a touch too dense & heavy though. Only a minor point though. Still delicious!

Nordic scalded rye sourdough (50% rye) with no additives, just rye & white flour, water and a touch of salt. A two stage process, first creating the 'scald' and leaving it to absorb the water, then a second stage using sourdough starter followed by natural fermentation to produce the rye loaf 36 hrs later (approx 900g to 950g)
White bread flour (Cereals containing gluten), Wholemeal rye flour (organic), Salt
